Spicy Songkhla Crabs

Thailand's cuisine is famous for it's hot taste which relates to the bird's eye chilli. If you don't like it very hot just add ingredient to suit your taste.
Ok let's start cooking Spicy Songkhla Crabs

Prepare the necessary ingredient
  • 4 large size crabs, any type 
  • 1 1/2 of teaspoon of curry powder
  • 10-15   bird eye chillies (you can add it more for extra spicy)
  • 1 stalk of lemongrass (to be blended)
  • 10-15 gm of fresh ginger not too much (to be blended)
  • 1 or 2 large red, yellow and green bell pepper(sliced) 
  • 3 tablespoon of chilli paste
  • 4 1/2 tablespoon of oyster sauce
  • 3 tablespoon of chilli sauce
  • 2 shallots(onions)(to be blended)
  • 1 chicken egg
  • 1 1/2 tablespoon of tamarind juice
  • Salt and sugar (add to the right taste)
  • Cooking Oil

Start cooking

Firstly cook the crabs in hot water until it turns red. After you're done, put the crab aside.

Secondly, heat the oil. Then, fry the shallots together with the lemongrass and bird eye chilli till it gives a nice flavour smell. Add in the chilli paste together with the curry powder and chilli sauce and oyster sauce.

Stir and  stir until it is nicely mixed and very vagrant,  after that add in the tamarind juice together with the egg. Finally put in the crabs.  Season the crabs accordingly with salt and sugar. Nice to serve them hot.
